The Best Peppermint Bark Recipe For The Holidays!

This is an easy peasy recipe you can make and win everyone's approval at the holiday party! People will think you spent HOURS making it, but really, just 20-30 minutes to prep it and an hour to let it sit. After that you just break up the bark and place them on and edible peppermint tray then place the whole thing on a pretty tray or in cute tin (like this one. SO cheap yet cute!).

What you will need:

Peppermint Bark:

8 ounces semisweet chocolate. I used the Bakers brand. Break these up into 1 inch pieces.

4 ounces dark chocolate. Break them up into 1 inch pieces

12 ounces of white chocolate (Bakers brand) and chop into 1 inch pieces.

2 teaspoons of peppermint extract

15-20 round hard peppermint candies- crush them

9x13 baking dish

1 saucepan

1 heatproof bowl


Peppermint Tray:

60-70 round hard peppermint candies

1 9inch cake tin

Wax paper


Let's get started:

Get a baking dish (I used this one) and line it with aluminum foil. I used a 9 x 13 dish but maybe next time may consider using a smaller size to thicken the bark! Make sure the shiny part of the aluminum is up (so facing you).

Heat 2 inches of water in a sauce pan on low. I personally start on medium high and bring it down to low and let it sit for a couple minutes on low before adding my heat proof bowl to the top. Add that heatproof bowl and do not let it touch the water. In the bowl, toss in your semisweet chocolate and keep stirring until it melts. It will take 8-10 minutes. Now add in half of your dark chocolate and let it melt. Pull the heat proof bowl off of the saucepan and wipe off the water (from the steam) off of the bottom. Begin to add in the remaining dark chocolate you have and keep mixing until it melts. If it is being stubborn, place it on top of the steamy saucepan for 10-20 seconds and keep mixing. Take it off, add in 1 teaspoon of peppermint extract and mix for 30 seconds and wipe off the bottom of the pan. Now it is the fun part. Pour in the mixture into your baking dish and spread it evenly. I lightly tap the bottom of the dish on the counter to make sure there are no air bubbles!

After 10 minutes (as you want the darker chocolate to settle a bit), begin the melting process for the white chocolate. Repeat the same instructions as above. Once melted, add in 1 teaspoon of peppermint extract and mix it in. Now layer the white chocolate evenly on top of the dark chocolate in your baking dish. Quickly sprinkle your crushed peppermint candy on top and lightly press them in. Cover in aluminum foil and let it sit out to harden. Usually takes an hour. Once it has hardened, you can break the pieces into the size of bark you want.

Now let's move on to the peppermint tray. This will take you to the next level of being a Pinterest queen. My girlfriend Neda shared this recipe with me and I HAD to make it after I saw how cute hers turned out. Take a round cake tin and place wax paper on the bottom. I cut the wax paper to fit perfectly at the bottom of the tin. Place hard candies one inch apart and put in the oven for 15 minutes at 350 degrees. Pull it out and let it cool down fully before placing your bark on it. I personally like mine extra melted and semi burned, but I highly suggest you do not do that to maintain the pretty striped on your peppermint edible tray.

2. Avocado- The easiest go-to snack! Slice that sucker open, add a little lime juice, salt, lemon pepper and voila, you have an easy healthy snack. You can also pair avocados with just about anything. You can make guacamole, put it on lettuce wraps, salads, and even with eggs in the morning.

3. Apple Cider or Balsamic Vinegar (organic of course)- Vinegar is your best friend. It is packed with probiotics so it helps you digest food easier and it is also filled with antioxidents that will help counter the effects of free radicals. Read about free radicals here

4. Fresh Citrus Juice- This is the easiest to incorporate since you probably already have a ton of limes and lemons in your fridge. Switch up your water drinking routine by adding in lemon into your water. Citrus fruits offer a great range of vitamin C, folate and potassium. 

5. Almond butter- This is a great protein punch when you are on the go. Add some onto a banana in the morning or for an afternoon snack. Did I mention it is also ridiculously delicious?

6. Flax oil- This is a fantastic addition to any salad dressing, shake or even just your oatmeal. The taste obviously is not the loveliest so that is why I suggest adding it to something you are about to eat or drink. Flax oil is loaded with omega-3 fatty acids and it is also gluten free, vegan friendly and is non-gmo.

7. Hummus- Since hummus is so rich in protein, it can help you fight hunger by keeping you full for longer! Use hummus in place of mayo on sandwiches and breakfast sandwiches. It is delicious!
